Spiced Honey Roasted Carrots with Kefir Feta Whip
A Kefir Feta Whip with Spiced Honey Roasted Carrots using @blakesalwaysorganic Kefir, is a side dish worth the hype ! This is one of those side dishes that brings a little extra love (and yes, a bit of sexiness) back to carrots.
The kefir and feta create a creamy, tangy contrast to the natural sweetness of the roasted carrots, while a touch of spice adds warmth and depth to the flavour. A beautiful addition to any roast dinner table, Christmas or otherwise.
Prep Time: 15 minutes, Cook Time: 30mins
Quantity: Serves 3-4
Ingredients:
• Bunch of carrots 🥕 with stalks
• 1 tsp cumin ground
• 1 tsp smoked paprika ground
• 1/2 tsp cinnamon ground
• Sea salt to taste
Feta Whip:
• 1 cup of Natural Dairy Kefir
• 200g of feta cheese
• 1 juice of lemon
• 3 TBSPs Olive Oil
• 2 garlic cloves
Honey Drizzle:
• 1 Tbsp honey - melted
• 2 Tbsps Olive oil
Method:
1. Wash and remove the stalks from your carrots, cut the carrots length ways in half (but save the stalks for garnishing!)
2. Cover a small roasting dish with parchment paper. Massage the spice mix and 3 tablespoons of olive oil onto the carrots, then place in the oven at 190c for approx 30-35mins until they have softened and browned. (Leave longer if needed)
2 . Put all the kefir feta whip ingredients into your blender & blend until smooth.
3 . Pour the creamy whip onto a large flat plate , neatly place your roasted carrots on top, and drizzle your honey olive oil dressing on top , then garnish with a few sprigs of the green stalks from the carrots.
